Louisiana Shrimp Creole
Description
Creole is a cuisine that was born in Louisiana in the 1600's when french migrants first travelled to the America.
It then fused with the cooking styles of African slaves and Spanish migrants into a style off creole cooking unique to the region.
This Shrimp Creole uses fresh vibrant vegetables, a unique mixture of spices and delicious juicy shrimp to create a classic Southern Louisiana dish.
Ingredients
Instructions
- Heat a pan to a medium heat and add the butter, onion and garlic. Saute for 4-5 minutes.
- Add the celery and capsicum to the pan and saute for a further 4-6 minutes, until lightly browned.
- Add the thyme, oregano, paprika, black pepper, cayenne pepper and bay leave to the pan and saute for another 1-2 minutes.
- Turn the heat to high and add the tomatoes and simmer at a high heat for 2 minutes. Add the chicken stock and reduce the heat to a slow simmer . Allow to simmer for 10-20 minutes until half of the liquid has evaporated.
- Add the salt (to taste) and the shrimp. Cook the shrimp for 3-5 minutes util the shrimp are bright shade of pink and then remove from heat.
- Serve on a bed of rice and garnish with a light sprinkling of spring onions and a slice of lemon (if using). Enjoy!
