Noodles

  • 200g Chinese egg noodles (or your preferred noodles)
  • 2 tablespoons sesame oil
  • Spicy Garlic Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons chilli oil (adjust to your spice preference)
  • 2 tablespoons black vinegar or rice vinegar
  • 2 tablespoons minced garlic
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon Sichuan peppercorns, toasted and ground (optional for extra heat and numbing sensation)
  • Garnish

  • Sliced green onions
  • Chopped coriander (optional)
  • Crushed peanuts (optional)
  • Instructions
    1. Cook the noodles according to the package instructions. Drain and toss with 2 tablespoons of sesame oil to prevent sticking. Set aside.
    2. In a pan at a medium heat, add the soy sauce, chilli oil, black vinegar, minced garlic, sugar, sesame oil, and ground Sichuan peppercorns (if using). Bring a simmer and then remove from heat.
    3. Pour the spicy garlic sauce over the cooked noodles. Toss to ensure the noodles are evenly coated with the sauce.
    4. Garnish with sliced green onions, chopped cilantro, and crushed peanuts if desired.
