Chicken Chow Mein

The noodles can be either soft or crispy, depending on the specific variation and personal preference.

Marinade

  • 500 grams Chicken Breast (sliced thinly)
  • 2 tbsp Chinese Rice Wine
  • 2 tsp Corn Flour
  • 1 tbsp Sesame Oil
  • Chow Mein Sauce

  • 2 tbsp Oyster Sauce
  • 1 tbsp Soy Sauce
  • 1 Cup Chicken Broth (chicken stock)
  • 2 tsp Corn Flour
  • 2 tsp Sugar
  • Ingredients

  • 2 tbsp Olive Oil
  • 1/2 tsp Garlic
  • 1 Carrot (sliced into carrot sticks)
  • 1/2 Capsicum (sliced)
  • 2 Cups Cabbage (sliced)
  • 3 Spring Onions (chopped)
  • 500 grams Egg Noodles (chow mein noodles)
  • 1 tsp Sesame Seeds (garnish, optional)
  • Instructions
    1. Add the rice wine, sesame oil and corn flour to a bowl and mix well to combine. Then add the thinly sliced chicken and make sure to coat with the marinade mixture. Allow to sit for 20-30 minutes.
    2. Heat a pan to a high temperature with a little oil and cook the chicken in batches so as to not over crowd the pan. Cook on a high heat for 2-4 minutes, until the chicken is cook through but not over cooked. Set the cooked chicken aside in a bowl.
    3. Add the Oil and Garlic to a wok or large pan and heat to a high temperature. Saute for 20-30 seconds.
    4. Add the carrot, stir fry for 30 seconds . Add the capsicum, stir fry for 30 seconds. Add the cabbage stir fry for 30 seconds
    5. Pour the chow mein sauce mixture into over the vegetables, mix to combine. Bring to a slow simmer cover the pan and simmer for 2-4 minutes. Until the veggies are slightly tender but not cooked through.
    6. Remove the lid and add the cooked chicken, chow mein noodles and spring onions into the pan. Mix with tongs to combine ad remove from heat
    7. Place onto serving plates and garnish with sesame seeds.
