Chicken Souvlaki

Description

Chicken Souvlaki is a popular Greek dish consisting of skewered and grilled pieces of marinated chicken. It is often served with pita bread and accompanied by various toppings and sauces. Chicken Souvlaki is commonly served as a sandwich or wrap. It can be enjoyed as a quick and flavorful street food or as a sit-down meal in Greek restaurants. The combination of tender, marinated chicken, fresh vegetables, and creamy sauces creates a satisfying and savory flavor profile that's popular both in Greece and internationally.

Marinade

  • 1 tsp Garlic
  • 1/2 tsp Rosemary
  • 1 tsp Oregano
  • 1 tsp Dried Mint (or 10 fresh mint leaves)
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1 tsp Paprika Powder
  • 1/2 tsp Cinnamon Powder
  • 1 Lemon (add the juice and the zest)
  • 2 tbsp White Wine Vinegar (optional)
  • 4-6 tbsp Olive Oil
  • Tzatziki Sauce

  • 1 Cup Grated Cucumber
  • 1 Cup Greek Yogurt (unsweetened yogurt)
  • 1 tbsp Fresh Mint (chopped)
  • 1 tbsp Lemon Juice
  • 1/4 tsp Garlic (crushed)
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tbsp Olive Oil
  • Ingredients

  • 500-600 grams Chicken (chopped into bite size chunks)
  • 6-8 Pita Breads
  • 1/2 Lettuce (sliced)
  • 4-6 Tomatoes (diced)
  • 1 Red Onion (finely sliced)
  • Kalamata Olives (optional)
  • 1 Capsicum (optional)
  • Instructions
    1. Add all the ingredients for the marinade to a bowl and mix to combine. Add the Chicken that has been cut into kebab sized chunks and stir into the marinade. Set aside to marinate for 1-2 hours of overnight if you have the time.
    2. For the tzatziki, grate the cucumber and then squeeze out as much excess water as you can with your hands. Then place the squeezed cucumber into a bowl and mix in with the remaining tzatziki ingredients. then set aside in the fridge.
    3. Add the chicken to skewers. If the skewers are wooden then soak them in water first. Then cook them on a BBQ, baked then in the oven, or fry them in a pan until cooked through. Gently brush any remaining marinade over the chicken as it is cooking.
    4. Heat the pita breads on a hot pan, in the oven or microwave until warmed through.
    5. Place a pita bread flat your preparation surface. Spread a portion of tsatziki sauce over the pita bread, add the chicken pieces from a single skewer, and finally add the other sliced and chopped ingredients.
    6. Fold to close, you can use a skewer to hold it together while serving if you wish. Enjoy.
