Ingredients

  • 1 cucumber, peeled, seeded, and finely grated
  • 1 1/2 cups Greek yogurt
  • 1 1/2 teaspoons garlic (minced)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, finely chopped
  • Salt and black pepper to taste
  • Instructions
    1. Peel the cucumber, cut it in half lengthwise, and scoop out the seeds with a spoon. Finely grate the cucumber using a box grater.
    2. Place the grated cucumber in a fine-mesh sieve or cheesecloth over a bowl. Sprinkle with a pinch of salt and let it sit for about 15-20 minutes. Squeeze to drain excess moisture.
    3. In a bowl, combine the Greek yogurt, minced garlic, olive oil, lemon juice, and chopped dill. Add the drained cucumber to the yogurt mixture. Mix well.
    4. Season the Tzatziki with salt and black pepper to taste. Adjust the flavours as needed.
    5. Cover the bowl and refrigerate the Tzatziki for at least 1-2 hours to allow the flavours to meld. Before serving, give it a final stir and garnish with a drizzle of olive oil and a sprinkle of fresh dill.
