Pork Souvlaki
Description
The cooking of Greek food on skewers dates back to the bronze age, and this Pork Souvlaki is the very definition of traditional Greek fast food.
In its simplest form it is a beautifully marinated pork snack or entree that can be eaten directly off the skewer.
If you would like to make more of a meal out of the pork skewers you can enjoy them with some warmed pita bread, fresh tomatoes and red onions along with a delicious Greek tzatziki sauce.

Instructions
- Mix all marinade ingredients together in a bowl and allow to marinate for 1-2 hours (or overnight if time allows).
- For the tzatziki, grate the cucumber and then squeeze out as much excess water as you can with your hands. Then place the squeezed cucumber into a bowl and mix in with the remaining tzatziki ingredients. then set aside in the fridge.
- Add the pork to the skewers. If the skewers are wooden then soak them in water first. Then cook them on a BBQ, baked then in the oven, or fry them in a pan until cooked through. Gently brush any remaining marinade over the pork as it is cooking.
- Heat the pita breads on a hot pan in the oven or microwave until warmed through
- Place a pita bread flat your preparation surface. Spread a portion of tsatziki sauce over the pita bread, add the pork pieces from a single skewer, and finally add the other sliced and chopped ingredients.
- Fold to close, you can use a skewer to hold it together while serving if you wish. Enjoy
