- In a bowl, combine warm water and sugar. Stir until the sugar dissolves. Sprinkle yeast over the water and let it sit for about 5-10 minutes until it becomes frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the activated yeast mixture. Add olive oil. Mix until the dough comes together.
- Transfer the dough to a floured surface. Knead for about 8-10 minutes or until the dough is smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until it has doubled in size.
- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
- Punch down the risen dough and divide it into 8 equal portions. Shape each portion into a ball. On a floured surface, roll out each ball into a circle about 6-8 inches in diameter.
- Place the rolled-out dough circles on a baking sheet or directly on the pizza stone. Cover with a damp cloth and let them rise for another 15-20 minutes.
- If using a pizza stone, carefully transfer the rolled-out dough circles onto the hot stone in the oven. Bake for 5-7 minutes or until the pitas puff up and develop a golden-brown color.
- Remove from the oven and let them cool slightly. The pitas will deflate a bit as they cool. Serve warm and enjoy your homemade pita bread!
