Ingredients

  • 4 large tomatoes (diced)
  • 1 cucumber (diced)
  • 1 red onion (thinly sliced)
  • 1 cup Kalamata olives (pitted)
  • 1 cup feta cheese (crumbled)
  • 1 green bell pepper (diced)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Instructions
    1. Dice the tomatoes and cucumber. Thinly slice the red onion. Dice the green bell pepper.
    2. In a large salad bowl, combine the diced tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and diced green bell pepper.
    3. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper.
