Tadka Dal Curry, a quintessential Indian delight, presents a harmonious blend of seasoned lentils and aromatic spices. Tadka

  • 2 tablespoon ghee or olive oil
  • 1 onion (sliced)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 dried kashmiri chilli (chopped)
  • 1/4 teaspoon asafoetida (hing)
  • 1/4 teaspoon chilli powder (to taste)
  • Dal

  • 1 tablespoon ghee or olive oil
  • 1 cup yellow lentils (mung dal), washed and soaked for at least 30 minutes
  • 1 teaspoon ginger (crushed)
  • 1 teaspoon garlic (crushed)
  • 1 green chilli (chopped, optional)
  • 1/2 teaspoon turmeric powder
  • 2 tomatoes (chopped)
  • 1/2 teaspoon Kasuri Methi
  • 8-10 curry leaves (optional)
  • 3/4 teaspoon salt (to taste)
  • Fresh coriander leaves for garnish
  • Instructions
    1. Rinse the moong dal and soak for 30 minutes.
    2. In a pan at a medium heat add the ghee, ginger, garlic, and chopped green chilli (if using). Sauté for 1 minute until the raw smell disappears.
    3. Add turmeric powder. Saute for 10-20 seconds, and then add then chopped tomatoes and cook until they become soft.
    4. Add the lentils, kasuri methi, curry leaves, salt, and 2-3 cups of water to the pan. Simmer covered for 30 minutes until the lentils are soft and well-cooked.
    5. In a small pan heat the ghee over medium to high heat. Add onion, cumin seeds, mustard seeds, dried red chilies, chilli powder, and asafoetida. Let the seeds splutter for 2-4 minutes.
    6. Pour the prepared tadka (tempering) over the cooked lentils. Stir to combine.
    7. Garnish the tadka dal with fresh coriander leaves. Serve hot with steamed rice or Indian bread (chapati or naan).
