Raita, a cooling and refreshing accompaniment in Indian cuisine, is a yogurt-based side dish that elevates any meal. Ingredients

  • 1 cup plain yogurt
  • 1/2 cucumber, peeled, seeded, and finely chopped
  • 2 tablespoons fresh mint leaves, finely chopped
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Salt to taste
  • 1/2 teaspoon roasted cumin seeds (for garnish, optional)
  • Fresh coriander leaves for garnish (optional)
  • Instructions
    1. In a bowl, whisk the plain yogurt until smooth.
    2. Add finely chopped cucumber and fresh mint leaves to the yogurt.
    3. Sprinkle cumin powder, coriander powder, and salt over the yogurt mixture.
    4. Mix all the ingredients well to ensure an even distribution of flavours.
    5. Optionally, garnish the raita with roasted cumin seeds for an extra layer of flavor. Fresh coriander leaves can also be added.
    6. Refrigerate the raita for at least 30 minutes before serving to allow the flavours to meld.
