Batter

  • 1 cup all-purpose flour (maida)
  • 1 tablespoon gram flour (besan)
  • 1/2 cup yogurt
  • 1/4 teaspoon baking soda
  • Water (as needed) to make a thick batter
  • Sugar Syrup

  • 1 cup sugar
  • 1/2 cup water
  • A few strands of saffron (optional)
  • 1/2 teaspoon cardamom powder
  • Frying

  • Oil for deep frying
  • Prepare the Batter
    1. In a mixing bowl, combine all-purpose flour, gram flour, yogurt, and baking soda. Mix well.
    2. Gradually add water and whisk to make a thick, smooth batter. Ensure there are no lumps.
    3. Allow the batter to ferment for 6-8 hours or overnight, covering it with a cloth.
    Fry the Jalebi
    1. Heat ghee or oil in a Jalebi dispenser or a squeezable bottle.

    4. Remove the Jalebis from the oil and drain excess oil.
    Soak in Sugar Syrup
    1. Immerse the hot Jalebis into the prepared sugar syrup. Let them soak for at least 1-2 minutes to absorb the flavors.
    2. Remove the Jalebis from the syrup, ensuring they are well coated.
