Ingredients

  • 500 grams carrots, peeled and grated
  • 500ml full-fat milk
  • 1/2 cup sugar (adjust to taste)

  • A handful of chopped nuts (almonds, cashews, pistachios)
  • Raisins for garnish
  • Instructions
    1. Peel and grate the carrots. Set aside.
    2. In a heavy-bottomed pan, add grated carrots and milk. Cook on medium heat, stirring frequently.
    3. Continue cooking until the carrots are soft and the milk has reduced significantly. Stir occasionally to avoid sticking to the bottom.
    4. Add sugar to the carrots and milk mixture. Stir well.
    5. In a separate pan, heat ghee. Add the grated carrots and cook in ghee for 10-15 minutes, stirring continuously.
    6. Add cardamom powder and chopped nuts to the mixture. Mix well.
    7. Keep cooking until the ghee starts separating from the halwa, and it has a rich, aromatic fragrance.
    8. Garnish with raisins and more chopped nuts.
