Marinade
Instructions
- Skewers, soaked in water for 30 minutes (if using wooden skewers)
- In a bowl, mix together yogurt, ginger-garlic paste, red chilli powder, turmeric powder, garam masala, ground cumin, ground coriander, salt, and vegetable oil to make the marinade.
- Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, or overnight for better flavour.
- Stove Top Method: Bring a pan to a medium-high heat and add a good portion of oil or ghee some ghee or oil. cook the chicken pieces without crowding the pan in seperate batches. Remove from pan and drain off any excess oil.
- Oven Method: If using an oven, preheat the oven to the highest temperature (usually around 475°F or 245°C). Thread the marinated chicken pieces onto the skewers. Grill the chicken skewers for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has a slight char. If using an oven, place the skewers on a baking sheet and bake. During cooking, brush the chicken with a little vegetable oil to keep it moist and enhance the flavours.
- Garnish (Optional): Garnish with chopped cilantro and serve with lemon wedges and mint chutney.
