Description

- Thinly slice the onions and separate the rings. Set aside.
- In a large mixing bowl, combine chickpea flour, rice flour, cumin seeds, coriander powder, turmeric powder, red chili powder, baking soda, and salt.
- Gradually add water to the dry ingredients, stirring continuously, until you achieve a thick, smooth batter. The consistency should coat the onion slices well.
- Add the sliced onions and chopped cilantro to the batter. Mix well, ensuring each onion slice is coated evenly.
- Heat vegetable oil in a deep pan for frying. The oil should be hot but not smoking.
- Drop spoonfuls of the rounded onion batter into the hot oil, you can gently shape these into round balls with with hands if your not afraid of getting a we bit messy. Fry until the bhajis are golden brown and crispy, turning occasionally for even cooking.
- Remove the fried bhajis from the oil using a slotted spoon and drain excess oil.
- Serve Onion Bhaji hot with mint chutney, tamarind chutney, or yogurt sauce.
- Garnish with additional chopped cilantro before serving.
