Description

Ingredients

  • 2 large onions, thinly sliced
  • 1 cup chickpea flour (besan)
  • 1/4 cup rice flour
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • A pinch of baking soda
  • 1/2 teaspoon salt (adjust to taste)
  • Fresh cilantro, chopped
  • Water (as needed)
  • Vegetable oil for frying
  • Instructions
    1. Thinly slice the onions and separate the rings. Set aside.
    2. In a large mixing bowl, combine chickpea flour, rice flour, cumin seeds, coriander powder, turmeric powder, red chili powder, baking soda, and salt.
    3. Gradually add water to the dry ingredients, stirring continuously, until you achieve a thick, smooth batter. The consistency should coat the onion slices well.
    4. Add the sliced onions and chopped cilantro to the batter. Mix well, ensuring each onion slice is coated evenly.
    5. Heat vegetable oil in a deep pan for frying. The oil should be hot but not smoking.
    6. Drop spoonfuls of the rounded onion batter into the hot oil, you can gently shape these into round balls with with hands if your not afraid of getting a we bit messy. Fry until the bhajis are golden brown and crispy, turning occasionally for even cooking.
    7. Remove the fried bhajis from the oil using a slotted spoon and drain excess oil.
    8. Serve Onion Bhaji hot with mint chutney, tamarind chutney, or yogurt sauce.
    9. Garnish with additional chopped cilantro before serving.
