Pizza Dough

  • 4 cups all-purpose flour
  • 1 teaspoon sugar
  • 2 1/2 teaspoon active dry yeast
  • 1 1/2 cups warm water
  • 2 tablespoons olive oil (or a little more)
  • 1 teaspoon salt
  • Pizza Sauce

  • 1 can crushed tomatoes
  • 1 teaspoon garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • Dough Instructions
    1. In a small bowl, combine warm water and sugar. Stir until the sugar dissolves. Sprinkle the yeast over the water and let it sit for about 5 minutes, or until it becomes frothy.
    2. In a large mixing bowl, combine the flour and salt. Make a well in the center.
    3. Pour the activated yeast mixture and olive oil into the well. Gradually incorporate the flour into the wet ingredients, mixing until a dough forms.
    4. Transfer the dough onto a floured surface and knead for about 8-10 minutes, or until it becomes smooth and elastic.
    5. Place the dough in a lightly oiled bowl, turning it to coat in oil. Cover with a damp cloth or plastic wrap and let it rise in a warm place for 1-2 hours, or until it doubles in size.
    Pizza Sauce Instructions
    1. In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
    2. Pour in the crushed tomatoes, and add dried oregano, dried basil, sugar, salt, and pepper.
    3. Bring the sauce to a simmer, then reduce the heat to low. Let it gently simmer for 15-20 minutes, stirring occasionally.
    4. Taste the sauce and adjust the seasonings according to your preference. If you prefer a smoother consistency, you can use an immersion blender to blend the sauce.
    5. Remove the sauce from heat and let it cool slightly before spreading it on your pizza dough.
    Instructions
    1. Preheat your oven to the highest temperature it can go, typically around 475-500°F (245-260°C).
    2. Punch down the risen dough and divide it into equal portions for pizzas. Roll out each portion to your desired thickness on baking paper or a floured surface.
    3. Spread the pizza sauce evenly over the rolled-out dough, leaving a small border around the edges.
    4. Arrange the slices of fresh mozzarella on top of the sauce.
    5. Slide the pizza (with baking paper if using a stone) onto the preheated pizza stone or place the baking sheet in the oven.
    6. Bake for 10-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
    7. Remove from the oven, scatter fresh basil leaves over the hot pizza, and drizzle with extra-virgin olive oil. Season with salt and pepper to taste.
