Description

Carbonara is traditionally made with long pasta varieties such as spaghetti, fettuccine, or bucatini. Carbonara is typically served hot and garnished with additional grated cheese and a generous sprinkle of freshly ground black pepper. It's a beloved Italian pasta dish known for its luxurious, creamy texture and the bold flavors of salty pancetta or guanciale combined with the richness of eggs and cheese. The result is a satisfying and indulgent pasta dish that's loved worldwide.

Ingredients

  • 3-4 Egg Yolks
  • 50g Parmesan Cheese
  • 100g Pancetta (thinly sliced bacon as a substitute)
  • 1 tsp Garlic
  • 4tbsp Olive Oil
  • Cracked Black Pepper (to taste)
  • 300g-400g Spaghetti
  • Parsley to garnish (optional)
  • Instructions
    1. Bring a pot of salted water to the boil and add the pasta, cook until al dente.
    2. In another pan add the Olive Oil, Garlic and Pancetta (or bacon) and saute for 3-4 minutes until it starts to get crispy.
    3. When the spaghetti is al dente, save 1/4 a cup of the salted water. Then strain the pasta and add the strained pasta to the pan with the garlic and bacon, gently fold into the other ingredients in the pan with a pair of tongs.
    4. Remove the pasta from heat and add the eggs yolks, 1/4 cup of salted water, 1/2 of the parmesan cheese and black pepper and gently fold into the pasta. Removing from the heat helps the sauce stay fluid and prevents the eggs from scrambling.
    5. Finally place the cooked Carbonara onto serving plates and garnish with the remaining parmesan cheese and parsley (if using). Enjoy!
