- In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion, minced garlic, grated carrot, and chopped celery. Sauté until the vegetables are softened.
- Add ground beef and pork. Cook until browned, breaking the meat apart with a spoon.
- Stir in crushed tomatoes, red wine (if using), tomato paste, dried oregano, dried basil, salt, and black pepper. Simmer for at least 1-2 hours, stirring occasionally.
- In a separate saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes to create a roux.
- Gradually whisk in the milk to avoid lumps. Continue cooking and whisking until the sauce thickens. Season with salt and a pinch of nutmeg. Remove from heat.
- Preheat the oven to 375°F (190°C).
- In a baking dish, spread a thin layer of Bolognese sauce. Place a layer of cooked lasagna noodles over the sauce.
- Spoon Bolognese sauce over the noodles, followed by a layer of béchamel sauce and a sprinkle of both mozzarella and Parmesan cheeses.
- Repeat the layering process until you've used all the ingredients, finishing with a layer of cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
