Tender chicken cutlets are delicately breaded, crisped to perfection, then lavishly smothered in zesty marinara sauce and melted mozzarella. Chicken Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups breadcrumbs (preferably Italian seasoned)
  • 1 cup grated Parmesan cheese
  • Olive oil for frying
  • Marinara Sauce

  • 2-4 tablespoons olive oil
  • 1 onion (finely chopped)
  • 1 tablespoon garlic (minced)
  • 1 can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basi
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)
  • Instructions
    1. Preheat the oven to 375F (190C).
    2. Season chicken breasts with salt and pepper. Dredge each chicken breast in flour, dip into beaten eggs, and coat with a mixture of breadcrumbs and grated Parmesan, pressing the coating onto the chicken.
    3. Heat olive oil in a large skillet over medium-high heat. Fry the chicken breasts until golden brown and cooked through, about 4-5 minutes per side. Place the cooked chicken on a paper towel to absorb excess oil.
    4. For the Marinara Sauce. In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until softened. Stir in minced garlic and cook until fragrant.
    5. Pour in crushed tomatoes, oregano, basil, sugar, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally.
    6. In a baking dish, spread a thin layer of marinara sauce. Arrange the fried chicken breasts in the dish.
    7. Spoon more marinara sauce over each chicken breast. Sprinkle shredded mozzarella over the top.
    8. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
    9. Garnish with fresh basil or parsley if desired. Serve the Chicken Parmesan with marinara sauce over cooked pasta or with a side of crusty bread.
