Description
Katsudon, a Japanese comfort food, is a delectable rice bowl featuring a crispy, breaded and deep-fried pork cutlet (tonkatsu) topped with a savoury and slightly sweet mixture of onions, eggs, and a soy-based broth.

Tonkatsu Instructions
- Season the pork loin chops with salt and black pepper. Dredge each pork chop in flour, shaking off excess.
- Dip the pork into the beaten eggs, ensuring it's well coated. Press the pork into the panko breadcrumbs, making sure it's evenly covered.
- Hea oil in a pan over medium-high heat. Fry the pork for about 5-6 minutes per side or until golden brown and cooked through. Place the fried tonkatsu on a paper towel to drain excess oil.
Katsudon Sauce
- In a separate pan, combine dashi, soy sauce, mirin, and sugar. Bring to a simmer.
- Add sliced onions to the simmering broth and cook until they become tender.
Assemble
- Cut the tonkatsu into strips and place them on top of the simmering onions in the broth.
- Pour the beaten eggs over the tonkatsu and onions, covering them evenly.
- Cover the pan and let it cook until the eggs are set.
- Place a serving of rice in each bowl. Carefully slide the tonkatsu and egg mixture on top of the rice.
- Garnish with chopped green onions and nori strips if desired.
