- Season the pork loin chops with salt and black pepper
- Dredge each pork chop in flour, shaking off excess.
- Dip the pork into the beaten eggs, ensuring it's well coated.
- Press the pork into the panko breadcrumbs, making sure it's evenly covered.
- Heat vegetable oil in a pan over medium-high heat. Fry the pork for about 4-5 minutes per side or until golden brown and cooked through. Place the fried tonkatsu on a paper towel to drain excess oil.
- For the tonkatsu sauce. In a small saucepan, combine ketchup, Worcestershire sauce, soy sauce, sugar, and Dijon mustard. Cook over medium heat, stirring occasionally, until the sauce is heated through and slightly thickened.
- Taste and adjust the sweetness or saltiness according to your preference. Remove from heat and let it cool slightly before serving.
- Slice the Tonkatsu into strips. Serve the tonkatsu over cooked rice with a generous serving of shredded cabbage on the side. Garnish with chopped spring onions.
- Drizzle the Tonkatsu sauce over the pork or serve it on the side for dipping.
