Chicken

  • 4 boneless skinless chicken breasts
  • Salt and black pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Oil for frying
  • Tonkatsu Sauce

  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • Serving

  • Cooked rice
  • Shredded cabbage
  • 1/2 cup spring onions (chopped, optional)
  • Instructions
    1. Season the chicken breasts with salt and black pepper. Dredge each chicken breast in flour, shaking off excess.
    2. Dip the chicken into the beaten eggs, ensuring it's well coated. Press the chicken into the panko breadcrumbs, making sure it's evenly covered.
    3. Heat vegetable oil in a pan over medium-high heat. Fry the chicken for 4-5 minutes per side or until golden brown and cooked through. Place the fried chicken on a paper towel to drain excess oil.
    4. To make the tonkatsu tauce. In a small saucepan, combine ketchup, Worcestershire sauce, soy sauce, rice vinegar, and sugar. Cook over medium heat until heated through.
    5. Slice the katsu chicken into strips. Serve the chicken over cooked rice, accompanied by shredded cabbage and spring onions. Drizzle tonkatsu sauce over the chicken or serve it on the side for dipping.
