Karaage Chicken, a Japanese culinary treasure, presents bite-sized perfection with its marinated and double-fried allure. Chicken

  • 500g boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 3 tablespoons soy sauce
  • 2 tablespoons sake (or dry white wine)
  • 1 tablespoon grated ginger
  • 2 teaspoons Garlic (crushed)
  • 1 cup cornstarch
  • Oil for frying
  • Dipping Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • Green onions and sesame seeds for garnish (optional)
  • Instructions
    1. In a bowl, combine soy sauce, sake, grated ginger, and minced garlic. Add the chicken pieces to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes, or refrigerate for a few hours for better flavor.
    2. Heat vegetable oil in a deep fryer or large pan to 350F (180C).
    3. Dredge the marinated chicken pieces in potato starch or cornstarch, ensuring they are evenly coated.
    4. Carefully place the coated chicken pieces into the hot oil, frying in batches for about 5-6 minutes or until golden brown and cooked through. Remove the fried chicken and place it on a paper towel to drain excess oil.
    5. To make the dipping sauce. In a small bowl, whisk together soy sauce, rice vinegar, sugar, and sesame oil to create the dipping sauce.
    6. Serve the Karaage Chicken hot, garnished with green onions and sesame seeds if desired. Dip the crispy chicken pieces into the savoury sauce and enjoy the delightful flavours of homemade Karaage!
