Description

Fajitas, a Tex-Mex culinary delight, feature sizzling strips of marinated and grilled meat, traditionally beef or chicken. Accompanied by sautéed bell peppers and onions, the flavourful medley is served hot on a tortilla. Marinade

  • 4 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon garlic (crushed)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chilli powder (to taste)
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Ingredients

  • 500g boneless, skinless chicken breasts (sliced into strips)
  • 1 large onion (thinly sliced)
  • 1-2 bell peppers, thinly sliced (use various colours for visual appeal)
  • 8 small flour tortillas
  • Sour cream
  • Guacamole (optional)
  • Salsa (optional)
  • 1 cup Shredded cheese
  • 1/2 cup fresh coriander (chopped)
  • Lime wedges (to serve)
  • Instructions
    1. In a bowl, whisk together olive oil, lime juice, minced garlic, ground cumin, chili powder, paprika, dried oregano, salt, and black pepper.
    2. Place the sliced chicken strips in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Marinate for at least 30 minutes, or refrigerate for a few hours for enhanced flavuor.
    3. Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken strips to the hot skillet and cook until they are browned and cooked through.
    4. Remove the chicken from the skillet and set it aside.
    5. In the same skillet, add sliced onions and bell peppers. Cook until they are tender-crisp and slightly charred.
    6. While cooking the vegetables, warm the tortillas in a dry skillet or microwave.
    7. Place a spoonful of cooked chicken on each tortilla. Top with sautéed onions and bell peppers.
    8. Serve the Chicken Fajitas with your favourite toppings like sour cream, guacamole, salsa, shredded cheese, chopped cilantro, and lime wedges.
