Description

Nachos is a classic Mexican dish consisting of a layer of corn chips covered with an assortment of Mexican flavoured toppings, and finished off with a gooey layer of cheese. This dish is a much loved favourite the world over and can be served extra toppings including sour cream, guacamole, and salsa.

Ingredients

  • 4 tbsp Oil
  • 1/2 tsp Garlic
  • 1 Onion (diced)
  • 3 tsp Cumin Powder
  • 1/2 tsp Oregano
  • 1 tsp Paprika Powder
  • 1/4 tsp Cayenne Pepper (to taste, optional)
  • 500 grams Beef Mince
  • 2 Tins Chopped Tomatoes
  • 1 Tin Red Kidney Beans
  • 1 Cup Black Olives(optional)
  • 1 tsp Beef Buillion (dehydrated beef stock)
  • 1-2 Pinches of Salt and Black Pepper (to taste, optional)
  • 1 Cup of Cheese of your choice (for topping)
  • Sour Cream (to serve)
  • Guacamole (to serve, optional)
  • 1-2 Large Bags of Corn Chips
    1. Heat the pan to a medium heat and add the oil, onion and garlic. Saute for 3-5 minutes.
    2. Next add all of the spices to the pan making sure there is enough oil to gently cook the spices to release their flavour. Saute for another 1 minute.
    3. Turn the heat to high and add the mince to the pan and brown the mince. This should take no more that 2-3 minutes.
    4. Next add the chopped tomatoes to the pan and continue to cook at a high heat. Allow the tomatoes to reach boiling point and continue to cook at a high heat for a further 2-3 minutes, this helps remove any sour taste. Use a splatter guard to prevent mess.
    5. Lower the heat and add the kidney beans (washed), olives (if using), beef stock, and salt and pepper.
    6. Continue to simmer with the lid off until the juice from the tomatoes has evaporated,
    7. Place a layer of corn chips on a large plate. Gently cover the corn chips with a layer of your prepared nacho mixture, and top with cheese.
    8. Optional - Turn your oven onto grill and place the plate of nachos in the over for 30-60 seconds. This will help the cheese melt and become a little toasted.
    9. Finally add a spoonful of sour cream on top and serve! If you have any guacamole then this can also be added to your toppings as an extra dipping option (yum!)
