Marinade
Instructions
- In a bowl, combine lime juice, orange juice, minced garlic, chopped cilantro, ground cumin, dried oregano, smoked paprika, chili powder, salt, black pepper, and olive oil.
- Place the chicken pieces in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well-coated. Marinate in the refrigerator for at least 2 hours, preferably overnight.
- Preheat your grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking.
- Remove the chicken from the marinade and let any excess drip off. Place the chicken on the preheated grill and cook for about 25-30 minutes, turning occasionally, or until the internal temperature reaches 165F (74C) and the chicken is nicely charred.
- Baste the chicken with any leftover marinade during grilling for added flavour.
- Remove the chicken from the grill and let it rest for a few minutes.
- Serve the Pollo Asado with lime wedges for squeezing over the grilled chicken.
- Enjoy your homemade Pollo Asado with its flavourful marinade and charred perfection, a delightful representation of Mexican culinary excellence!
- Serve the grilled chicken with rice, tortillas, or your favourite sides for a complete and delicious meal.
