- In a blender, combine the soaked guajillo and ancho chilies, garlic, onion, ground cumin, dried oregano, ground cloves, salt, black pepper, and apple cider vinegar. Blend until you have a smooth paste.
- Place the beef chunks in a bowl and coat them with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
