Description

Enchiladas, a beloved Mexican dish, are corn tortillas filled and rolled around a delectable stuffing, often featuring seasoned meats, beans, or cheese. Bathed in rich, flavourful sauces like red chilli or green tomatillo, they're baked until bubbly. Topped with cheese, sour cream, and fresh herbs, enchiladas offer a harmonious blend of textures and vibrant, spicy flavours.

Filling

  • 2 cups cooked shredded chicken
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup diced bell peppers (mix of colours)
  • 1 cup shredded cheese
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chilli powder ( to taste)
  • Salt and black pepper to taste
  • Enchilada Sauce

  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 1 teaspoon chilli powder (to taste)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1 cup chicken broth
  • Salt to taste
  • Ingredients

  • 10-12 small corn tortillas
  • 1 cup shredded cheese (for topping)
  • Chopped fresh coriander for garnish (optional)
  • Sour cream and sliced jalapeños for serving
  • Instructions
    1. Preheat your oven to 375°F (190°C).
    2. In a bowl, mix together shredded chicken, black beans, corn, diced bell peppers, shredded cheese, ground cumin, chili powder, salt, and black pepper.
    3. In a saucepan, heat olive oil over medium heat. Add flour, chilli powder, ground cumin, garlic powder, and dried oregano. Whisk until fragrant.
    4. Gradually whisk in chicken or vegetable broth, stirring continuously to avoid lumps. Simmer until the sauce thickens. Season with salt to taste.
    5. Warm the corn tortillas in a dry skillet or microwave to make them pliable. Spoon a portion of the filling onto each tortilla and roll it tightly. Place the enchiladas seam-side down in a baking dish.
    6. Pour the enchilada sauce over the rolled tortillas, ensuring they are well coated. Top with shredded cheese.
    7. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
    8. Remove from the oven and let it rest for a few minutes. Garnish with chopped cilantro if desired.
    9. Serve the Chicken Enchiladas hot, topped with additional cheese, sour cream, and sliced jalapeños.
