Ingredients

  • 1 can chickpeas (garbanzo beans, drained and rinsed)
  • 1/4 cup tahini
  • 1/4 cup extra virgin olive oil (plus more for serving)
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic (minced)
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 2-3 tablespoons water (as needed for desired consistency)
  • Paprika and fresh parsley for garnish (optional)
  • Instructions
    1. f using canned chickpeas, drain and rinse them under cold water. If using dried chickpeas, cook and cool them following package instructions.
    2. In a food processor, combine chickpeas, tahini, olive oil, lemon juice, minced garlic, cumin, and a pinch of salt.
    3. Process the mixture until smooth. If the hummus is too thick, add 2-3 tablespoons of water, one tablespoon at a time, until you achieve the desired consistency.
    4. Taste and adjust the seasoning by adding more salt or lemon juice if needed.
    5. Transfer the hummus to a serving bowl. Create a well in the center and drizzle with extra virgin olive oil. Garnish with a sprinkle of paprika and fresh parsley if desired.
