Fattoush, a vibrant Levantine salad, beckons with a mosaic of colours and textures. Crisp romaine lettuce, juicy tomatoes, and crunchy cucumbers dance with the zing of radishes and green peppers. A sprinkling of sumac and a shower of toasted pita croutons elevate this medley, while a zesty sumac-infused dressing ties together this refreshing celebration of Middle Eastern flavours.

Salad

  • 2 large tomatoes (diced)
  • 1 cucumber (diced)
  • 1 green bell pepper (diced)
  • 1 cup radishes (thinly sliced)
  • 1 cup romaine lettuce (chopped)
  • 1/2 cup fresh mint leaves (chopped)
  • 1/2 cup fresh parsley (chopped)
  • 1/2 cup green onions (sliced)
  • 1 cup pita bread, cut into small squares and toasted for croutons
  • Dressing

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground sumac
  • 1 teaspoon pomegranate molasses (optional)
  • Salt and black pepper to taste
  • Instructions
    1. In a large bowl, combine the diced tomatoes, cucumber, green bell pepper, sliced radishes, chopped romaine lettuce, mint leaves, parsley, and green onions. oss the ingredients together until well mixed.
    2. In a small bowl, whisk together the extra virgin olive oil, lemon juice, ground sumac, pomegranate molasses (if using), salt, and black pepper.
    3. Taste the dressing and adjust the seasoning as needed.
    4. Toast the pita bread squares in a skillet or oven until golden and crispy.
    5. Add the toasted pita croutons to the salad. Drizzle the dressing over the salad and toss well to coat.
    6. Allow the Fattoush to sit for a few minutes before serving to let the flavours meld.
