Marinade

  • 1 tsp Garlic
  • 2 tsp Cumin Powder
  • 2 tsp Paprika Powder
  • 2 tsp Coriander Powder
  • 1 tsp Cardamom Powder
  • 1/2 tsp Turmeric Powder
  • 1/4 tsp Cayenne Pepper (optional)
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 4 tbsp Olive Oil
  • Sauce

  • 1/2 tsp Garlic
  • 2 tbsp Lemon Juice
  • 1/4 tsp Cumin Powder
  • 1 cup Unsweetened Yoghurt (greek or indian)
  • 1 tbsp chopped fresh Parsley or Mint (optional)
  • Salt and Pepper (to taste)
  • Ingredients

  • 500 grams Chicken Thighs
  • 1/2 Lettuce (chopped)
  • 2-3 Tomatoes (sliced)
  • 1 Red Onion (sliced)
  • 1/2 Cucumber (sliced, optional)
  • 1 cup Grated Cheese
  • 4-6 Pita Breads
  • Instructions
    1. Combine all of the marinade ingredients into a bowl and mix well. Add the chicken and allow to rest for 30-60 minutes (over night if time allows).
    2. Mix all sauce ingredients together and set aside in the fridge until required.
    3. Cook the chicken. You can do this on a BBQ, on the stove top in a frying pan, or in the oven. Cook the chicken until it is well cooked but do not allow it to dry out.
    4. Once the chicken is cooked allow it to rest for 5-6 minutes so it will retain its juices.
    5. Slice the chicken and serve with the lettuce, tomatoes, red onion, cucumber, cheese, pita breads and sauce. You can make these into wraps or allow people to create there own combination. Enjoy!
