Ingredients

  • 1 cup fine bulgur wheat
  • 1 1/2 cups boiling water
  • 2 cups fresh parsley (finely chopped)
  • 1/2 cup fresh mint (finely chopped)
  • 4 tomatoes (diced)
  • 1 cucumber (diced)
  • 3 green onions (finely sliced)
  • 1/4 cup extra virgin olive oil
  • Juice of 2 lemons
  • Salt and black pepper to taste
  • Instructions
    1. Place the bulgur in a heatproof bowl. Pour boiling water over it, cover, and let it sit for about 20-30 minutes until the bulgur absorbs the water and becomes tender.
    2. Fluff the bulgur with a fork to separate the grains and allow it to cool to room temperature.
    3. In a large mixing bowl, combine the chopped parsley, mint, tomatoes, cucumber, and green onions.
    4. Add the cooled bulgur to the bowl with the chopped vegetables.
    5. Drizzle extra virgin olive oil and lemon juice over the mixture. Season with salt and black pepper to taste.
    6. Gently toss all the ingredients together until well combined. Refrigerate the tabouleh for at least 1-2 hours to allow the flavors to meld.
    7. Before serving, give the tabouleh a final toss and adjust the seasoning if needed.
    8. Garnish with additional fresh mint leaves or a slice of lemon if desired.
