Ingredients

  • 3 cups cooked jasmine rice (preferably cold, day-old rice)
  • 2 tablespoons olive oil
  • 2 tsp garlic (minced)
  • 1 cup protein of choice (chicken, shrimp, or tofu), diced
  • 1 cup mixed vegetables (bell peppers, carrots, peas, etc.), chopped
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce (vegetarian oyster sauce for a vegetarian version)
  • 1 teaspoon sugar
  • 1 cup fresh Thai basil leaves
  • Lime wedges, for serving
  • Instructions
    1. Ensure all your ingredients are chopped and ready before you start cooking. If using day-old rice, break up any clumps to ensure it's loose.
    2. Heat oil in a wok or large skillet over medium-high heat. Add minced garlic and sauté until fragrant. Add diced protein (chicken, shrimp, or tofu) and cook until it's almost fully cooked.
    3. Toss in the mixed vegetables and stir-fry until they are tender-crisp. Push the ingredients to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix them with the other ingredients.
    4. Add the cooked jasmine rice to the wok, breaking up any clumps.
    5. Drizzle soy sauce, fish sauce (if using), and oyster sauce over the rice. Sprinkle sugar and toss everything together until well combined.
