Pad Thai

Description

Pad Thai is a popular and iconic Thai dish known for its delicious combination of stir-fried rice noodles with a harmonious blend of flavors. Pad Thai is traditionally served hot and is garnished with a generous sprinkle of ground peanuts. Lime wedges are typically provided on the side, allowing diners to add a squeeze of fresh lime juice to taste. It's a beloved Thai street food and restaurant dish known for its sweet, savory, and slightly tangy flavor profile, making it a favorite choice among Thai cuisine enthusiasts. It can be customized to suit individual spice preferences with the addition of extra chili or chili sauce.

Ingredients

  • 200g Pad Thai Rice Noodles
  • 1-2 tbsp Oil (peanut oil if you have it)
  • 1/2 Finely sliced Onion (optional)
  • 1/2 tsp Garlic
  • 300g Thinly sliced Chicken (shrimp or tofu can also be used)
  • 2 Eggs
  • 1 1/2 Cup Bean Sprouts
  • 2 tbsp Chinese Chives
  • 1/2 Cup Peanuts (chopped)
  • Lime Slices to Serve
  • Coriander (optional)
  • Pad Thai Sauce

  • 2 tbsp Tamarind Paste
  • 2 tbsp Fish Sauce
  • 2-3 tbsp Brown Sugar
  • 1/4 tsp Chilli Powder (optional, to taste)
  • Instructions
    1. Combine the Tamarind Paste, Fish Sauce and Brown Sugar. Mix well and set aside. Have a little taste to check its balance.
    2. Cook the noodles per instructions on the packet. Try to have them cooked in time to add to the pan in step 5.
    3. Saute the Garlic and finely Sliced Onions( if using) for 2-3 minutes in a wok or large pan.
    4. Add the Chicken or Prawns and saute until cooked through.
    5. Add the Rice Noodles to the pan and gently fold them into the mixture. Then make a well in the centre and add the eggs. Lightly cooked the eggs in the middle of the pan constantly stirring them.
    6. Evenly pour the sauce mixture over top of the noodles.
    7. Finally add the Bean Sprouts, Chinese Chives and Half the Peanuts and gently fold into the noodles.
    8. Serve with a slice of Lime garnished with finely chopped Coriander (if using) and the remaining chopped peanuts. Enjoy!
