  • 200g shrimp (peeled and deveined)

  • 1 teaspoon sugar
  • 1 tablespoon fresh coriander (garnish)
  • Thai bird chilies (garnish, optional for extra heat)
  • 3-4 sliced green onions
  • Instructions
    1. In a pot, bring chicken or vegetable broth to a simmer. Add lemongrass, kaffir lime leaves, Thai chilies, galangal or ginger, and tomato. Simmer for 10-15 minutes to infuse flavours.
    2. Add shrimp and mushrooms to the simmering broth. Cook until shrimp turns pink and mushrooms are tender.
    3. Stir in fish sauce, soy sauce (if using), lime juice, and sugar. Adjust seasoning to taste.
    4. Optionally, strain the soup to remove any of the unwanted solid ingredients, or leave them in for a heartier texture.
    5. Ladle the hot soup into bowls. Garnish with fresh cilantro, sliced green onions, and extra Thai chilies if desired.
