The Noodles

  • 200g wide rice noodles (pad thai noodles)
  • 2 tablespoons oil
  • The Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sweet soy sauce
  • 1 teaspoon sugar
  • 1 tsp ground white pepper (to taste)
  • Stir Fry

  • 2 tablespoons olive oil
  • 500g chicken or beef (thinly sliced)
  • 2 tsp garlic (minced)
  • 2 cups Chinese broccoli (chopped)
  • 2 eggs, lightly beaten
  • Instructions
    1. Cook rice noodles according to package instructions. Rinse under cold water to stop cooking. Set aside.
    2. In a small bowl, mix together soy sauce, oyster sauce, sweet soy sauce, sugar and white pepper. Set aside.
    3. Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and sliced chicken or beef. Stir-fry until meat is cooked through.
    4. Push the cooked meat to one side of the wok. Add a bit more oil if needed. Crack the eggs into the wok, scramble, and cook until just set. Add chopped Chinese broccoli and stir-fry until slightly tender.
    5. Add the cooked noodles to the wok, followed by the prepared sauce. Toss everything together until the noodles are evenly coated and heated through.
    6. Taste and adjust the seasoning if necessary.
