Instructions
- Cook rice noodles according to package instructions. Rinse under cold water to stop cooking. Set aside.
- In a small bowl, mix together soy sauce, oyster sauce, sweet soy sauce, sugar and white pepper. Set aside.
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and sliced chicken or beef. Stir-fry until meat is cooked through.
- Push the cooked meat to one side of the wok. Add a bit more oil if needed. Crack the eggs into the wok, scramble, and cook until just set. Add chopped Chinese broccoli and stir-fry until slightly tender.
- Add the cooked noodles to the wok, followed by the prepared sauce. Toss everything together until the noodles are evenly coated and heated through.
- Taste and adjust the seasoning if necessary.
