Pho (Vietnamese Soup)
Description
Pho, a Vietnamese culinary treasure, is a soul-warming noodle soup renowned for its rich, aromatic broth and delicate rice noodles.

- Boil the bones in hot water for 5-10 minutes. Then discard the water and rinse the bones under cold water. This step helps to create a broth for your Pho
- Lightly roast all of your spices, cloves, cinnamon stick(s), fennel seeds, coriander seeds, star anise, and cardamon pods. Roast slowly for 2-4 minutes being careful not to burn them. Then remove from heat and set aside
- Add beef bones, onions, ginger, garlic, roasted spices, fish sauce, salt and sugar to a stock pot with 3 litres of water, the water should just cover the top of the bones. Simmer for 6-8 hours, then remove from heat
- Carefully strain the broth through some fine cloth, ideally you want the broth to be and clear. Pick any meat off the bones and set aside.
- It is important to taste and season the broth. The broth is the star of the show!
- Cook the rice noodles per packet instructions.
- To your serving bowls add noodles and slice sirloin (raw). Next pour your boiling broth over the rice noodles and raw meat, this will cook the meat. Then add the remaining topping, serve and enjoy!
