Pho (Vietnamese Soup)

Description

Pho, a Vietnamese culinary treasure, is a soul-warming noodle soup renowned for its rich, aromatic broth and delicate rice noodles. Typically featuring beef or chicken, it's a harmonious blend of savoury, sweet, and spicy flavours. Laden with fresh herbs, bean sprouts, and lime, each steaming bowl of pho is a sensory journey, capturing the essence of Vietnamese comfort cuisine.

  • Ingredients

  • 3-4kg quality beef bones
  • 300 grams beef sirloin (thinly sliced)
  • 2 onions (sliced)
  • 1tbsp freshly sliced ginger
  • 2 garlic bulbs (sliced horizontally/cut in half)
  • 10 whole cloves
  • 1 large cinnamon stick (or two average sized)
  • 1 tbsp fennel seeds
  • 2 tbsp coriander seeds
  • 5 star anise
  • 5 green cardamom pods
  • 1/4 cup fish sauce
  • 2 tsp salt (to taste)
  • 1 tbsp sugar (to taste)
  • 1 packet rice noodles (300g-400g)
  • Instructions
    1. Boil the bones in hot water for 5-10 minutes. Then discard the water and rinse the bones under cold water. This step helps to create a broth for your Pho
    2. Lightly roast all of your spices, cloves, cinnamon stick(s), fennel seeds, coriander seeds, star anise, and cardamon pods. Roast slowly for 2-4 minutes being careful not to burn them. Then remove from heat and set aside
    3. Add beef bones, onions, ginger, garlic, roasted spices, fish sauce, salt and sugar to a stock pot with 3 litres of water, the water should just cover the top of the bones. Simmer for 6-8 hours, then remove from heat
    4. Carefully strain the broth through some fine cloth, ideally you want the broth to be and clear. Pick any meat off the bones and set aside.
    5. It is important to taste and season the broth. The broth is the star of the show!
    6. Cook the rice noodles per packet instructions.
    7. To your serving bowls add noodles and slice sirloin (raw). Next pour your boiling broth over the rice noodles and raw meat, this will cook the meat. Then add the remaining topping, serve and enjoy!
