- In a small saucepan, combine sugar and water over medium heat. Allow the sugar to dissolve and cook until it turns a deep amber colour, swirling the pan occasionally to ensure even caramelisation. Once the caramel is ready, immediately remove it from heat to prevent burning.
- In a large bowl, combine chicken pieces with fish sauce, soy sauce, and black pepper. Mix well and let it marinate for at least 30 minutes.
- Heat vegetable oil in a large, deep skillet or wok over medium-high heat. Add ginger and garlic, sauté until fragrant. Add the marinated chicken pieces, searing on all sides until browned.
- Pour the prepared caramel sauce over the chicken, stirring to coat the pieces evenly. Add sliced onions and red chilies (if using), and continue to cook for a few minutes until the onions are softened.
- Stir in oyster sauce and sugar, coating the chicken with the mixture. Pour in the chicken broth, bring to a simmer, then reduce heat to low. Cover and let it simmer for 20-30 minutes or until the chicken is cooked through and the sauce has thickened.
- Garnish with chopped green onions and cilantro. Serve the Ga Kho Gung hot over steamed rice.
