Caramel Sauce

  • 1/2 cup sugar
  • 2 tablespoons water
  • Marinade

  • 500g chicken (thighs or drumsticks)
  • 3 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon black pepper
  • Ingredients

  • 2 tablespoons olive oil
  • 3 tablespoons finely chopped ginger
  • 1 tsp garlic (crushed)
  • 1 onion, thinly sliced
  • 1-2 red chilies sliced (optional, to taste)
  • 1 tablespoon oyster sauce
  • 1 tablespoon sugar
  • 1/2 cup chicken broth
  • Green onions, chopped (for garnish)
  • Fresh coriander, chopped (for garnish)
  • Steamed rice (for serving)
  • Instructions
    1. In a small saucepan, combine sugar and water over medium heat. Allow the sugar to dissolve and cook until it turns a deep amber colour, swirling the pan occasionally to ensure even caramelisation. Once the caramel is ready, immediately remove it from heat to prevent burning.
    2. In a large bowl, combine chicken pieces with fish sauce, soy sauce, and black pepper. Mix well and let it marinate for at least 30 minutes.
    3. Heat vegetable oil in a large, deep skillet or wok over medium-high heat. Add ginger and garlic, sauté until fragrant. Add the marinated chicken pieces, searing on all sides until browned.
    4. Pour the prepared caramel sauce over the chicken, stirring to coat the pieces evenly. Add sliced onions and red chilies (if using), and continue to cook for a few minutes until the onions are softened.
    5. Stir in oyster sauce and sugar, coating the chicken with the mixture. Pour in the chicken broth, bring to a simmer, then reduce heat to low. Cover and let it simmer for 20-30 minutes or until the chicken is cooked through and the sauce has thickened.
    6. Garnish with chopped green onions and cilantro. Serve the Ga Kho Gung hot over steamed rice.
