Nuac Cham Sauce

  • 1/4 Cup Fish Sauce
  • 1/4 Cup Hot Water
  • 2 tbsp Rice Vinegar
  • 2 tbsp Brown Sugar
  • 1/2 tsp Garlic
  • Marinade

  • 350g Chicken (thighs are best)
  • 1/2 tsp Garlic
  • 1 tbsp Lime Juice or Tamarind Paste
  • 1 tbsp Soy Sauce
  • 1 tbsp Brown Sugar
  • 2 tbsp Oil
  • 1 Stalk of Lemon Grass (finely sliced)
  • Ingredients

  • 100g Vermicelli Noodles
  • 1 Cup Sliced Cucumber
  • 1 Cup Carrot (thinly sliced or grated)
  • 1-2 Cups of Bean Sprouts
  • 1/2 Cup Peanuts (optional, finely chopped)
  • Mint Leaves and Coriander to Garnish (can use one or both)
  • Lime Wedges to serve.
  • Instructions
    1. For the Nuac Cham sauce. Add the sugar to the hot water and stir to dissolve, them add all other Nuac Cham Sauce ingredients and place in the fridge to cool.
    2. Next add all marinade ingredients to a seperate bowl, stir to combine and set aside to marinate for 20-30 minutes.
    3. Cook the vermicelli per the instructions on the packet.
    4. Add the chicken marinade to a pan and fry over a medium to high heat until the chicken is cooked through. Then remove from heat.
    5. Place portions of vermicelli in serving bowls or plates. Then top with the Cucumber, Carrot, Bean Sprouts and Chicken. Sprinkle the chopped peanuts over the top.
    6. Spoon some Nuac Cham sauce evenly over the top of each portion you are serving.
    7. Garnish with the mint and/or coriander and serve with a wedge of lime. Enjoy!
