Gil Cuon (Vietnamese Spring Rolls)
Description
Goi Cuon, also known as Vietnamese spring rolls or fresh spring rolls, are a delightful dish featuring translucent rice paper wrapped around shrimp, herbs, vermicelli noodles, and sometimes pork or tofu.
These vibrant and healthy rolls are often served with a hoisin-peanut dipping sauce, creating a refreshing and flavourful experience that captures the essence of Vietnamese cuisine.

Instructions
- Cook the vermicelli per packet instruction and set aside.
- Mix all ingredients for the dipping sauce in a bowl, taste and adjust according to your personal preference, set aside.
- Fill a bowl with warm water and soak one rice paper wrapper for 4-8 seconds, then place on your working area.
- Place a lettuce leaf on the bottom of the rice paper.
- Next add a small handful of vermicelli noodles, some herbs and a few shrimp and pork if using on top of the lettuce.
- Fold the sides of the rice paper in and then tightly roll from the bottom to the top.
- Repeat the process with the remaining ingredients.
- Serve the Vietnamese spring rolls with the prepared hoisin-peanut dipping sauce.
