Gil Cuon (Vietnamese Spring Rolls)

Description

Goi Cuon, also known as Vietnamese spring rolls or fresh spring rolls, are a delightful dish featuring translucent rice paper wrapped around shrimp, herbs, vermicelli noodles, and sometimes pork or tofu. These vibrant and healthy rolls are often served with a hoisin-peanut dipping sauce, creating a refreshing and flavourful experience that captures the essence of Vietnamese cuisine.

Rolls

  • 12 rice paper wrapper (round)
  • 200g cooked shrimp
  • 100g cooked vermicelli
  • 1 lettuce
  • Fresh herbs to taste (mint, coriander, garlic chives)
  • 1 cup cucumber (sliced)
  • Pork (sliced, optional)
  • Peanut Sauce

  • 1/4 cup hoisin sauce
  • 2 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1/4 tsp garlic (crushed)
  • 1 tbsp sugar
  • 1 tbsp rice wine vinegar
  • 1/2 cup water
  • Instructions
    1. Cook the vermicelli per packet instruction and set aside.
    2. Mix all ingredients for the dipping sauce in a bowl, taste and adjust according to your personal preference, set aside.
    3. Fill a bowl with warm water and soak one rice paper wrapper for 4-8 seconds, then place on your working area.
    4. Place a lettuce leaf on the bottom of the rice paper.
    5. Next add a small handful of vermicelli noodles, some herbs and a few shrimp and pork if using on top of the lettuce.
    6. Fold the sides of the rice paper in and then tightly roll from the bottom to the top.
    7. Repeat the process with the remaining ingredients.
    8. Serve the Vietnamese spring rolls with the prepared hoisin-peanut dipping sauce.
